Dish Spotlight: Onion Soup From Comme Ça

The first solid dud on our slow crawl through the brand spanking new Cosmopolitan of Las Vegas was found at Comme Ça.  I’m hesitant to tear in too much considering the entire resort is a week old as of the writing of this, but, our meal at Comme Ça had a common thread among four out of the five dishes we sampled.  No dish better exemplified Comme Ça’s biggest hurdle than the Soupe A L’Oignon Gratinee ($9), or as we ‘Mericans say it, Onion Soup.

When I first looked at Comme Ça’s menu I thought it was reasonably priced because I was expecting some expertly executed food with expertly layered flavors.  The cooking of the food was fine for the most part, but it was the flavor department that was disappointing.  Onion Soup has three primary flavor providers; Onion, Beef or Veal Stock and the Fortified Wine of Your Choice (Madiera, Port, Sherry, etc.).  The more this liquid of love is reduced, the more full the flavor gets.  Perhaps a tour of a Bouquet Garni (lil’ tied up package of fresh herbs that’s removed before consumption) would be used to for extra depth to the flavor.  And did I mention that the liquid should be reduced at a simmer to concentrate the flavors?  It takes time to make good food.

This Onion Soup didn’t put in the dues necessary to be a successful dish.  And this was the case with much of what The Wife and I ate at this one outing to this newly-opened brasserie.  A lack of seasoning here, a reduction in need of reducing there and a depth of flavor missing everywhere, the food once thought to be well-priced instantly turned into a typical Las Vegas Strip gouge.  While a place like China Poblano has seemed to kick ass and take names right out of the gate, Comme Ça appears to have stumbled a bit.  Only time will tell if they find their stride.  I’m rooting for them.  Just like we should do to make a good Onion Soup, I’m going to give them some time to be at their best.

The Weekly Bad Picture Of Good Food: Eggs Benedict From Payard Patisserie & Bistro

I was sitting on the toilet the other day thinking about titles to the world’s shortest books.  I think a lot when I’m on the toilet. It’s what I do.  Anywho, there’s a few that came to mind:  Intelligent Policies by the Republican Party, Instances of Testicular Fortitude by Barack Obama, The Benefits of Organized Religion by Pope Benedict XVI, Quality Journalism by The Las Vegas Review-Journal, Hilarious Late Night Bits by Jay Leno and Wise Relationship Decisions by The Wife.  Unfortunately for those of us in the 702, another one of those titles is Good Eggs Benedicts in Las Vegas.  While the Eggs Benny book might be thin, it certainly contains this mighty fine example of a perfect croissant, topped with perfect ham, topped with two perfectly poached eggs and smothered in a perfect hollandaise from Payard.  However, another title of a world’s shortest book is Professional Photography Techniques by Mike Dobranski, thus making the Eggs Benedict from Payard Patisserie & Bistro at Caesars Palace this week’s Weekly Bad Picture Of Good Food.

Finally the resort us fans of food have been waiting for, The Cosmopolitan of Las Vegas, will be open to the public on Wednesday, December 15th at 8pm.   If I had to pick the three or four restaurants I’m most looking forward to, I’d have to tip my hat to both of José Andrés’ places with Jaleo and especially China Poblano, David Myers’ Comme Ca (pronounced ‘come saw’ for We-The-Frenchy-Deficient) and Block 16 Hospitality’s (folks that brought us LBS Burger) Holsteins.

Jaleo is Chef José Andrés’ Spanish tapas emporium, so obviously the tapas slut in me is excited about that.  For me, the most exciting restaurant in the building is Andrés’ China Poblano, and original concept of his that will be a Mexican / Chinese fusion.  Sounds good to me…and oddly logical considering I don’t know of that combo being done anywhere else.  While Comme Ca is an import from Los Angeles, it will be nice to have an accessible, centrally located French Brasserie in town to go to.   Last, but not least, Holsteins will be the requisite burger joint, but feature natural and organic ingredients and house-made sausage. I like house-made sausage.  Best wishes to everyone at the Cosmo.  I look forward to eating you out.  Wait…that didn’t come out right…

A restaurant at the Hard Rock Hotel has once again made my jaw drop with a food deal.  Hot off the heels of Rare 120′s Half Off Food on Mondays thing comes AGO’s Old World Classic Prix Fixe Menu.  Available everyday AGO is open (Thursday-Monday from 5pm-10:30pm), the prix fixe includes a glass of wine, bread basket, soup or house salad, and choice of pasta entrée.  Pasta entrée selections include Spaghetti with Meatballs or Sausage, Lasagna, Fettuccini Alfredo, Capellini Pomodoro, and Cheese Ravioli.  Are you ready for the price?  $12.99.  Holy shit. Cheap.

It’s another day and another fundraiser for the James Beard Foundation.  This one isn’t even in Las Vegas, but it involves five guys with joints here in town, so I thought I’d give it a mention.  You may have heard of them; Alain Ducasse, Francois Payard, Joël Robuchon, Guy Savoy and Jean-Georges Vongerichten.  I guess all the good cooks were busy!  Wow, this ridiculous lineup of legendary talent will cook a multi-course meal for Culinary Liasons, the James Beard Foundations 2010 Gala dinner and silent auction.  The dinner will take place on November 10th in the Four Seasons Restaurant in New York City. It probably won’t suck.

Behind These Walls A Restaurant Gets Reborn. Fleur by Hubert Keller is Coming

The renovations at the Fleur de Lys space at Mandalay Bay continue.  Construction is said to be “slow,” but I’m being told that the reborn restaurant is still slated to have a soft opening in mid-December with a blowout official grand opening after the New Year.  While the restaurant will be focusing on an international tapas concept, as reported here months ago, there will be some entree-sized portions as a hold over from the old restaurant.  The menu is still being finalized, but I’ll certainly give it a shoutout once I get my grubby paws on it.  Another big change will be the name of the space, as it is no longer Fleur de Lys, but will now forever be known as Fleur by Hubert Keller.  I can’t wait for this baby to open!

Since 2007, Wolfgang Puck restaurants have partnered with the Clark County School District to both educate kids on making healthier decisions and to provide kid tested, mother approved recipes to the school district so the students can eat a little better.  Tomorrow, October 19, this tradition continues as students from Hollingsworth and Cox Elementary Schools will be on hand at the Wolfgang Puck Pizzeria and Cucina at the Crystals Mall to learn about and taste new healthy items created by the Puck team.  A second event will be held for 6th graders from Fremont and Miller Middle Schools on November 17th.  Tasting Las Vegas (that’s me) will be on hand tomorrow to report on what goes down.

Yesterday, October 17th the Jean-Louis Palladin dinner benefiting the James Beard Foundation happened at RM Seafood.  Twenty of the finest chefs in the city were on hand creating an extraordinary meal from recipes all taken from the Late Chef Palladin’s “Cooking With The Seasons.” The Omnipresent Robin Leach was on hand as he donated his time to serve as MC and auctioneer of the event.  By the way, he also paid for both his $295 tickets and donated an additional $2,000 to the Jean-Louis Palladin Fund which provides scholarships for up and coming chefs to go to culinary school.  I’m broke, so I just hung out in the kitchen after eating my $12 Catfish Sloppy Joe downstairs.  The Catfish Sloppy Joe was tasty.  The event was almost incomprehensibly amazing.  I’m sure Sir Robin will be writing up a full post about the event, and I’ll certainly put out the link on Facebook and Twitter when he does.

Atomic #7 has created a fall menu of autumn inspired ice creams, lattes and hot puddings.  The hot puddings will come in array of falltastic (did I really just type that?) flavors that include; cinnamon, chai, chocolate, vanilla, cardamom and rum raisin.  Yes, please!  Atomic #7 is located near the Galleria Mall in The Hendo, next to Panera Bread.  They’re open 7 days a week from noon to 10:30pm.

The Hash House A Go Go Sahara location will be hosting the kickoff party for Mix 94.1′s Bite of Las Vegas event on Wednesday, October 20, from 6pm-8pm.  There will be tents set up in the Hash House parking lot where you’ll be able to partake in $1 Draft Beers, $5 Mashed Potato and Bacon Stuffed Burgers, $3 Snickers Chocolate Bread Pudding and more.  Mix 94.1′s JC Fernandez will be on hand and there will be all sorts of giveaways such as the first 50 people that show up will get tickets to see George Wallace at the Flamingo!  If nothing else, that makes the trip worth it…George Wallace is HILARIOUS!  I don’t know shit about the actual Bite of Las Vegas event, but I’m sure you can find out all sorts of information about it as you gorge on cheap mashed potato stuffed burgers at Hash House Sahara on Wednesday!

How exciting that John Mariani of Esquire magazine named Julian Serrano at Aria as one of the Best New Restaurants of 2010! This makes me kind of proud, as in the beginning, the other boys in town were on their knees for Sage and going gaga over Gagniare at Twist…but all along I’ve said the best restaurant at CityCenter was Julian Serrano.  Now it’s getting some much deserved national attention by one of their own, and not just as best at CityCenter, but one of the best in the nation.  Congrats to Chefs Julian Serrano, Jose Picazo and the entire crew at Julian Serrano!  In all fairness, Sage was also mentioned in Mariani’s article as one of the “Another Eleven Restaurants Not To Miss,” so the other boys were close, but no cigar!

I’m going to do my best to write a full post about all of the happenings at this past weekend’s Blogworld and New Media Expo, but I want to give a major shoutout to one of the most amazing human beings I have ever met, Babette Pepaj of Bakespace.com fame, for putting on one hell of a show with the TECHmunch track at this year’s conference.  I really don’t know if I’ve ever met anyone with their shit more together than Babette.  Like if that wasn’t enough, she’s a total sweetheart, too!  The series of panel discussions and cooking demos she put together was a smash hit at the conference.  I can’t thank her enough for including this little bubble gum and duct tape operation to sit along side some of the most amazing and successful people in food blogging today.  Words can’t express how truly thankful I am and what a spectacular show she put on.  If you like to cook anything in your kitchen, Bakespace.com is a must for you to visit.  Babette has built an online community of home cooks and bakers like none other.  She’s good.
